V. Low Syn Mushroom Rice

I love rice dishes but always used the prepackaged ones. I've been trying to find some syn free and very low syn alternatives and found this...

Mushroom Rice

1 cup of Long Grain Rice
Condensed Cream of Mushroom Soup
1 cup of Chicken Stock
Sliced fresh mushrooms and onions
Garlic
Salt & Pepper
Frylight

Fry the mushrooms and onions in frylight and add the garlic and seasoning as they begin to soften.
Add rice, soup and stock to caserole dish and mix thoroughly. Add mushrooms and onion and stir through.
Cook for approx. 1 hr

You can add as much mushroom and onion as you like :)

The syns are 5 for the whole thing and it easily serves 4.

Will be taking this to Mondays taster session :)
 
What brand of soup are you using? I would have thought that condensed cream of mushroom soup would be rather high in syns.

A 295g tin of the one that Batchelors do is 16 syns - have you found a lower-syn one?
 
I use the batchelors low fat one in a few recipes i make.

Hi Dodders thanks for that, it is very yummy indeed and just what I needed with all this horrid cold, wet weather.

I can't remember what the brand was that I used, will have to check when I get home.

I did make lots of this but there was only a little left over so I ended up keeping it for my lunch rather than taking it to class :rolleyes:

I added half an onion and half a large punnet of mushrooms and it could deffo have taken more veg, a very tasty way of getting my 1/3 superfree I think :D

I am going to make a chicken rice with the condensed chicken soup and see how that turns out too. DH enjoyed this too which I was really happy with.
