Cake for a newbie?

Hi guys, sorry for posting on here, I dunno if it's the right place, but I couldn't find a recipe request board.

My friends work does Cake Friday and it's his turn to take cake in, I'm making a normal cake for him to take but he started Atkins last week and I wondered if there were any cake recipes so that I could make him his own cake too and he isn't left out?

Any help would be greatly appreciated. I don't do atkins so I don't know much so thought I best come and ask the people who know what they are talking about :)

aww bless him. maybe go buy him an atkins bar that would be easier :D oh and get him to join on here !

Oooh you can buy atkins bars? Will they sell them in Boots or Holland and barrats do you think? I may get him a couple as I know he is new to it all and not the most foreward planning person, think hes living off chicken lol
 
Hi yes you can get the bars in Boots not sure about H&B but you can also get them in Tesco.
I have an almond sponge recipe in my diary thread I'll find it and copy and paste for you it's easy enough to make and tastes good and although maybe not ideal for induction it's not too carby!
 
Recipe -

2 large eggs separated

60ml double cream
2 tbsp splenda (optional)
Lemon flavouring (or juice and rind)
120g ground almonds
1 tsp baking powder
pinch salt

Basically mix egg yolks, cream, splenda, salt and lemon flavour until smooth. Whisk in ground almonds and baking powder until smooth
Whisk egg whites until soft peaks form
Fold in beaten egg whites into almond mixture
Bake for 30-40mins @ 170c or till springy to the touch
 
how many carbs in this cake honey?

It is a nice recipe I make muffins from it as easier to portion control! It's from Neris and India's cookbook it's good and worth getting think it's about a fiver off Amazon. I nuke in the micro after letting them cool and have it with some cream! Also seems to freeze well.

Hey Vicky if you make 6 muffins (or 6 slices I guess) then it each portion has 2g carbs - yum! x
 
on request, after seeing me eat mine at work, i made a choccie mim for a colleague yesterday, i think she's a convert! :)

Anyone tried this with hazelnuts instead?

MOUTHGASM!

I used 100g of chopped hazelnuts instead of 120g of ground almonds.....

Also, per 100g,

Hazelnuts:

Calories 655.0kcal
Carbohydrate 5.8g
Protein 15.4g
Fat 63.5g
Fibre 6.5g

Almonds :

Calories 611.6kcal
Carbohydrate 8.1g
Protein 23.4g
Fat 54.8g
Fibre 8.4g

Win???

Bought ground almonds today for my first attempt at Atkins cake - will report back...
