Does anyone know how I can make no carb gravy?

I have roast pork (without the fat alas, I chucked it, not clever, I know) and was thinking I could mix some beef stock and xanthan gum?

I keep meaning to try this Susie - got the gum last week but keep forgetting and using flour to thicken meat juices - not sure anyone else would like it with xanthan gum. Will try at the weekend and let you know if you haven't done it before then. I would think stock and X gum would be a good start though.
 
I do gravy like that, with the juices and fat from the joint, the trick is to add the gum after you have bought it to the boil, oh and use it sparingly Susie.
