Tortilla quiche
Serves -4
1 portion is syn free if your milk comes from your healthy A choice.
3 medium potatoes
1 med onion
¼ green, yellow, red peppers
4 Asparagus. tips trimmed (optional)
1/4 Broccoli (just cooked optional)
Sweet corn ( just cooked optional)
1tsp Mixed dried herbs
1pt skimmed milk or semi skimmed for non fat free dish.
3 eggs
Milled Salt ,pepper to taste
7” flan tin
Method

Peel and chop potatoes in half
Boil or steam them until just cooked then allow to cool.
Chop the onion and the peppers into medium dice.
Leave asparagus as it is and separate broccoli into florets .
On a low heat Dry fry the onion and peppers ,asparagus etc stirring constantly till onions turn translucent
Put aside to cool.
When the potato has cooled slice into ¼ ” thick slices
Line the bottom and sides of flan tin with the potato.
Put onion pepper and asparagus etc, on top of potato
Mix the eggs and milk whisk vigorously with dried herbs.
Pour over egg mix till you ger as much as you can in

Put into the oven at 180c for fan oven and 200c in the middle of a non fan oven.
15- 20 mins cooking time.


Tip using skim milk is better for totally fat free* quark is also something you may consider to add ,and semi skim milk will make it taste richer. Add more mixed herbs if you want too. For a non vegy option add grilled bacon.
*As long as it comes out of your healthy A option allowance.:D
 
Looks like another winner thanks Nigel. Never thought to use potatoes as a base for quiche before have used slices of ham before which works well.
