No syns fat free chicken curry

Hi I make a chicken curry which has no fat at all in it. Providing you trim all the fat from a chicken breast it qualifies as fat free. I brought the curry to the last Slimming world meeting and everyone loved it. It’s my own recipe.

Here is the recipe and method.
serves 2

2 skinless raw chicken breasts with all the fat trimmed. Cut into cubes.
2 medium onions.
1 tbls tomato paste.
1-2 tbls of mixed curry spices.
2 tins of quality chopped tomatoes( napolina)
1/2 tin(from the tin of tomatoes)of water.
4 fresh green chillies chopped ( deseeding optional) or Chilli powder to your taste.
1 tsp of fresh crushed garlic.
2 fresh peppers sliced.
Fresh coriander for garnish.
Purée the onions in a blender and add the garlic.
Cut the chicken into cubes.
Place a large thick bottomed pan on a moderate heat and add the onions and garlic.
Dry fry until onions start to become translucent.
Add the curry spices and tomato paste constantly stirring for 1 minute to stop it sticking
Add the chicken and stir till sealed.
Add the chilli and stir for 1 minute to blend into the chicken.
Add the chopped tomato and the water and stir.
Bring to the boil and then simmer for about 15 mins ,
When the curry has reduced add the peppers and season to taste cook for a further 5 mins and serve adding coriander to garnish.
Serve on a bed of freshly boiled rice.

tomato paste is that passata or puree if its puree there is syn in it i know it aint alot but if u are trying to be 100% even the odd syn will count but looks like a lovely currie something i have being looking for without having to use the patak stuff thanks for recipie:)
 
mmm looks lovely, I mostly do green days with the occasional red but can always have this on a red day without the rice :) Thanks again, I read your other thread regarding recipes and I think its really good as I am not that clever in the kitchen and tend to stick to the same thing. The recipes on here help me a lot and I am always on the look out for new ones :)

I wasn't aware there was a syn value to tomato paste. I was misinformed, I will have to kill someone if that is the case.
It doesn't matter much though as it an be left out. Try Paprika it is a good colouring agent. I think it's free but not 100% sure as i cannot find it in the syn calculator.
 
thought it was more than that sorry but as i said woudent be much was just pointing it out as i thought if u were trying to be 100% it could just tip u over the limit :(
 
Thanks Madamelaminx and evethewitch. It is good to know it's only a small syn. I did try to be syn free in that one but i was told by a member of slimming world it was free , she may have confussed it with something else. But you are totally right it's not syn free with the paste in and I am very happy that you pointed it out, ignorance is bliss, but not to be encouraged in my game.
 
Dont mean to be akward but what spices are you using in the 1 -2 tbsp of mixed curry spices or is it just curry powder.

just had this, it was beautiful! better than the chicken curry on the SW website even if I did make it well too spicy!
 
i actually do the exact curry, but put it together in a different way!

i cut 6 onions, (mine serves 4), and 5 garlic cloves, and blend when the chopped toms come to boil (2 tins) then add chillis and the spices, then add the chicken and leave to simmer untill chicken cooked (45mins ish) then add chopped coriander. Its beautiful and the blended onions give it a proper curry texture. x
 
I will definately have to try this. I have never actually cooked a curry the slimming world way but Ive fancied one a few times since I started. Looking forward to it!
 
have u tried putting mushy peas in too? makes it very thick :) xx
