Depends what kind of recipe your making I love the tangy taste so not sure i can be of help. Morrison's and sainsbury's quark is less tangy then the one you get at asda (you used to get the same one everywhere but in the last 6 months they seem to have changed it to be more like fromage frais)
No idea on the syns for ricotta have you looked on the sw website i have got to start work so no time to look .
