Have been thinking a lot about this stage and now have 18 days to refeed. I'm going to cook healthy soups that I love and freeze in single portions for lunches, also other single dish healthy meals just for me for emergencies. Still not sure what diet I am going to follow would like to get into generally healthy with treats some days then cutting back the next day. May be a bit risky though. Any tips?
 
Good for you thinking ahead. That is definitely a strategy for success. It is definitely a good idea to have some homemade ready meals for emergencies. It is when we get in late or are dog tired that we are most at risk of having stodge or fast food.
I make up three portions at a time of lentil curry. It will keep in the fridge for a few days and is ready to pop into the microwave and have with a bit of salad or on its own. I also make up three portions of quinoa which can be substituted for rice/potato/pasta in any recipe. It also keeps in the fridge for a few days. It is also a good idea to keep a tin of cannelini beans or chick peas etc in the cupboard which can be used for salads, curries or whatever you fancy. These are low cal and very filling.
 
Ooh lentil curry, havent had that in years but my hubby used to like it, still have the recipe, i'll make a batch and freeze some, thanks for the tip. x
