Red Day HELP! - RED day mains, served with..... ??

Hi all,
Been doing slimming world for a few months now but I do mainly end up having a GREEN day just because its so much easier to just make a quick pasta dish or have a jacket potato or something.

But occasionally I want a RED day so what 'side dishes' have any of you tried?

I have tried roasted veg which is nice.
I have done every kind of salad imaginable!

I am going to try cauliflower rice tonight but I am just curious what everyone else does?
I like spicy food but everything should have noodles/rice/bread with it really otherise you are just eating a bowl of hot spicy stodge everynight which isnt very nice really!

Please help!
 
This is the exact problem I have with red days, I feel like I need carbs to bulk out the meal! I tend to have loads of steamed veg, or a Hex B of pasta. Or salad!
 
I use a hexb of potato's for either boiled/mashed/chips/wedges or just have bread. When I have a curry, I just syn the rice :)
 
You could always 'spice up' your roasted veg. I always season mine, either with salt/pepper or garlic/ chilli flakes etc... you can use something different each time and it tastes different. I've also used potatoes as a HE as well. I tend to stick to EE because it gets rid of this problem, but occasionally I'll do a red day.
 
How about tinned Borlotti (Kidney) Beans, Butter Beans, etc? I use my Syns for a drizzle of olive oil, salt, splash of vinegar....gorgeous.
 
beans would have to be synned on red or used as a HEb

I definately agree re: butternut squash. I cut it up into cubes, sprinkle with some paprika, spray with frylight and then roast in the oven. It is great mixed through a salad too for extra fullness along side your red dish.

Suede is another good one to have, as it is great mashed up.

I also love lots of different roast veggie, aubergine, courgettes, carrots etc
