Cake recipes???

Does anyone have any seriously low pointage cake recipes pretty please???

I'm thinking of experimenting with artificial sweetener instead of sugar, egg whites instead of whole eggs and no fat! Has anyone tried this??

Let's just say I "experimented" last night with some egg whites, artificial sweetener, lemon zest and self raising flour and it's safe to say I think I'll be sticking to normal cake recipes but just saving points for them!! lol :p

Congratulations on your weight losses btw! That's brilliant and I am VERY jealous!! You must be so proud of yourself :)

thanks, wow to your weight loss, over 7 stone, thats amazing, I also read that you go to the Gym alot, thats well good, I have never been to a gym in my life I would be too scared x x

hiya, im not sure if you have found a recipe yet, but ive just got the 'summer sizzlers' WW recipe book-and theres a cake recipe in there. i havent tried it yet, but i will post it word for word, and you can decide if you want to give it a go......

sponge cake with summer berries:
ingredients:
  • low fat cooking spay
  • 3 large eggs
  • 100g golden caster sugar (or you could use the splender brown sugar?)
  • 100g plain white flour, sifted
  • 2tbspn reduced sugar strawberry jam
  • 50g fresh strawberries (halved)
  • 50g fresh raspberries
  • 50g blackcurrents or blueberries
  • to decorate
  • mint leaves
  • 1/2 tspn icing sugar
method:
  • pre-heat the oven to gas 7/220c/fan oven 200c. spray teo 18cm sandwich tins with the cookign spray and line the bases with circles of greaseproof paper.
  • in a large clean bowl whisk the eggs and sugar together until very pale and light in texture;this will take about 5 mins with an electric whisk. you'll know when the eggs are whisked enough ifyou lift the beaters and they leave a trail for a few seconds.
  • using a metal spoon, fold the flour into the mixture carefully but thoroughly. divide the mixture between the prepared tins, nd level the surface.
  • bake for 8-10 minutes until golden brown and springy to the touch. remove from the oven and turn out onto cooling rack. remove the greaseproof paper. cover with a damp clean tea towel and leave until completely cold.
  • spead the strawberry jam on the surface of one sponge and scatter most of the fruit over it. top with the second sponge and decorte with the remaining fruit and mint leaves, spinkle with icing sugar

serves: 6
3 points per serving-18 points per recipe.

Have you tried the WW cake mix trick? Buy the Betty Crocker devils food cake and make it up with Diet Cok (or Sprite, 7-Up etc) instead of oil/eggs and bake as directed. It works really well. DH couldn't tell it wasn't a "proper" cake. I wrote about it in my blog

You could experiment with icing too... 0% greek yoghurt and icing sugar maybe?
