curried rice

synful soul
This recipe evolved by accident and I am cooking it right now. The vegetables in it vary according to what I have in as Thursday is my shopping day and this uses up whats left.

I did not know what to cook for dinner one night so looked in the cupboards and fridge and this is what I came up with.

1 pkt. Bachelor's Golden rice.
1 tsp. garam masala, or curry powder, or cumin whatever you have in.
1 red pepper
2 long green peppers
1 onion
8 french beans
2 new potatoes. copped into cubes and boiled.
2 tomatoes.
1 tbsp. chutney ( any ), mine is a home made peach one.

Roast the red and green peppers and in a separate dish roast the tomatoes.

cook the rice according to the packet instructions but add the onion finely chopped and the sliced beans and add the garam masala and the chutney.
When the peppers are roasted chop them and add them to the rice. Add the potato.
Mash the tomato until it is like a sauce and serve as a sauce over the rice dish.

It is delish. and very filling. This amount is usually enough for dinner one day and then lunch the next.

I think the only syns on a green day are in the chutney and I calculate that as 2 syns.

Sounds yummy thanks Sue... fancy sharing your home made peach chutney recipe too?
