Delicous dinner, simple & tasty

I normally do a tomatoey whizzed up sauce with pasta. But a couple of weeks ago I was watching Nigel Slaters Simple Suppers and he roasted a load of veg drizzled with olive oil and when it was done he squished it with a fork then poured it over the pasta. It looked delish. So, I nipped to Tesco and got courgettes, peppers, shallots, mushrooms and tomatoes. Chopped them into big chunks, sprayed with frylight then roasted. I cooked some taglitelli (spelling???), squished the veg abit then throw it on the pasta and stirred and added a HEXA of cheese. It was lush, I had it the next few nights too! :D

errrr about 25mins on 200 degrees (in a fan assisted oven). I just chop the shallots in half or leave them whole and aa stick a fork in them and when they are squidgy and fall apart I know everythings ready. BTW drain your pasta well, theres nothing worst then watery pasta and veg, lol!
