Quickie Packed Lunch Recipe Mission...should you choose to accept it!

Your mission:

Provide a recipe for a delicious lunch.

Requirements:
1. Must be no more than 400 calories.
2. Must have no more than 15g fat.
3. Must be portable without leaking all over my bag.
4. Must be quick to make in the morning, or will still be nice if made the night before.
5. Must be able to be eaten within the ten minutes I will probably get in between dashing to a different uni building.

EGG MAYONAISE SANDWICH

NIMBLE Brown Whole Meal Bread
CALS - 48 x 2 = 96 FAT SAT- 0.1 x 2= 0.2

Boiled Egg
CALS - 66 FAT SAT - 1.4

Hellmans Light Mayonaise 1TBSP
CALS - 35 FAT SAT - 0.5

SNACKS

Harvest Chewee White Chocolate Bar
CALS - 91 FAT SAT - 1.5

Ryvita Minis Cream Cheese & Chive
CALS - 82 FAT SAT - 0.3

TOTAL CALS - 370 calories
TOTAL FAT SAT - 3.9g

 
I take a salad to work. At first I thought it would be a real pain in the bum, but actually it does not take long and it's so worth it to help feel in control of what food you're going to be eating.

In one medium sandwich box I put lettuce, onion, pepper and sweetcorn. In a smaller sandwich box I put what I'm having to make the greenery more exciting so either ham, babybel light, tuna, salmon, etc. Then in a little pot I put a dressing like sweet chilli sauce, balsamic vinegar or extra light philidelphia.

I put it all in a cool bag with a little ice pack to keep it fresh till lunch time.

For snacks I take a packet of quavers or snack-a-jacks.

I've not tried making it the night before, but I'm sure it would be fine in the fridge over night.
