Hi lovelies,

Am a bit stuck tonight, I love my fish and managed to get some salmon fillets for tonight, but am stuck what to do with them?! I have had enough pasta to last me a life time this week so am trying to avoid that, I do Extra Easy so that's not a prob, anybody got some amazing ideas I can crib for tea for OH and me?? Thank you :worthy: xx
 
I sometimes top salmon with pesto ( I like the tomato pesto rather than the green basil one) and bake in oven. Serve with salad.
 
Thanks lovely that sounds really nice (how many syns do you give for the pesto? I only like the red one too). Ended up taking salmon fillet, squeezing lemon juice on it, mixed herbs and salt and pepper then wrapping in bacon rashers with fat cut off and baking in the oven at 200 for 20 mins. Served with savoury rice and veg and it was DELICIOUS! Want to put a photo up but dont know how to attach it!! xx
 
I've just started SW so havent actually ate them as a SW meal: just as a regular family meal (my 3 year old son likes the salmon/pesto combo)

I suppose I'd use their red pesto syn value (dont have book at hand). If you want to be extra fancy, sprinkle some breadcrumbs on top before baking. Tbh, looks good enough to serve if entertaining!
 
I'm having the salmon fillets from the Extra Easy cookbook tomorrow.

Grilled Ginger and Soy Salmon
1/2 syn on extra easy/Red

4 large salmon skinless fillets
6tbsp dark soy sauce
2tsp grated ginger
2 level tsp clear honey (2 syns)
fresh pepper

Preheat grill to medium high, place salmon fillets in a tray. Mix together all other ingredients, pour over fish and toss to coat. Grill for 12-15 minutes

I know its a bit late but good for next time?
