Tomato and Basil Risotto

I made the Tomato and Basil Risotto from the latest SW magazine and it was AMAZING!!!!

I have never made risotto before but it turned out really well. OH agreed and wants me to make it again! (must be good if he likes it!) :)
 
mmm... I was looking at that recipe yesterday and wondering if it would be nice (never made a tomato-y risotto before) so glad you posted!

I've made a similar one but the recipe came from the Good Food website. I like a bit of chilli or Tabasco added and then add some mozzarella at the end (grated or chopped) it melts and is lovely and stringy
 
I think it will be ok, you can put whatever you want in I would have thought just as long as the mushroom dont go too mushy. Perhaps put them in closer to the end of cooking?!?!? ;)
 
Didn't put mushrooms in it. DH and DD didn't like it as there is no meat in and to be honest we all found it tasteless:( For us it would have been better with chilli in. DH put loads of hot pepper sauce on it!
 
I saw this and fancied it...i love risotto but never get round to making it!! Really must make an effort if it has good feedback :) Thank you!
 
There is a recipe on the SW site somewhere for beetroot risotto - it is REALLY flavoursome! I whack a tiny bit of white wine in mine also, only about three tablespoons!
