Fridge Soup.

This is an easy favourite for me for lunch or just a quick fill me up.

As the name implies it is any veg. you have in the fridge. For me today it was.

Butternut squash, onion, tomato, red pepper, carrot, cabbage and lettuce. The lettuce gives a slightly nutty flavour.

I cook the lot in stock, any flavour you want and in cube form. I used chicken today. Do not be afraid to use two if you are doing a large quantity. Add either, garam masala, cumin or curry for an extra kick. When it is all cooked blend it and just enjoy.

This is delicious, filling, and on a green day free. I think on a red day as well. On a green day I add a tbs of peas and one of sweetcorn into my lunch portion.

I make soup like this a lot, you can even make it thicker and put meatballs in it
 
you are so right. It is a perfect base for so much.

I use it as a sauce for egg fried rice on a green day and for chicken on a red day.

how much water do you use in the stocK ?
 
It depends on the amount of vegetables and how thick you want it. I always blend mine. Also how strong you want the flavour of the stock cube. I always use a little rather than a lot.

Sorry for the delay in getting back to you. I am still finding my way around the forums.

I have soup every day as a filler. It is free and it is filling and helps me keep on track. , For example today I am doing a roasted red pepper soup. Simple and delicious.

If you want a thicker soup, whichever one you are making.....add cauliflower or if you are on green potato.
