Coronation Quorn/Chicken

Hi Everyone, :)
I invented this recipe when I went to SW a couple of years ago, it went down very well in class and always had to make it when there was a taste evening, I made it with Quorn, so I could have it on a green day with a big portion of rice but now with EE you could make it with leftover cooked chicken and still have the rice, the whole thing works out at 2 syns on green and EE also on Red but you have to count the rice.

Coronation Chicken

Serves 2 (but I have eaten the whole thing before now)
1 onion finely chopped
1 level Tbsp of Patak’s Tikka Masala Paste (1 syn)
2 level Tsp of apricot Jam (1 syn)
½ bag of quorn chicken style pieces
250g Fat Free Natural Fromage frais
Sweetener to taste
THE WHOLE DISH IS ONLY 2 SYN’S

Fry the onion in the Tikka Masala paste (this acts as oil) until soft
Stir in the Jam and cook gently for about 2 minutes
Add quorn piece’s (if using frozen you can add them from frozen) and coat well
Cook until quorn has cooked about 15 mins from frozen you may need to add a splash of water if the mixture looks to dry
Meanwhile mix the sweetener to the fromage frais the amount is up to you depending how tart you like your fromage frais, (I put about 8 tsp in)
Once the quorn is cooked set aside and allow it to go cold,
When cold add the fromage frais and stir well until thoroughly mixed
This is delicious with Rice and salad; you can also make it with cooked chicken, and just have with a large salad if you’re following the Red plan
You can always add more jam or/and Masala Paste and add the extra syns or even use reduced sugar jam and have 2 tsp for ½ syn
This is one of the recipes I really enjoy!!!

I have made this now - delicious!!!
I added some mango chutney instead of the jam (no jam in the house!) and used tikka powder instead of the paste, but it was still lovely!

I'm glad it worked that way, just remember mango is 2 syns per table spoon but you shouldn't have to count the curry powder so probably will work out the same!:)
