Do you have the recent mag, there is a recipe in there i fancy which uses peppers & you put an egg in the middle & bake in the oven, looks yummy.
Couscous is cooked very easily the basis is just hot water & seasoning of your choice.
I usually put my couscous in a tub & add enough water to cover it & some more, but not too much. Then cover & leave for a few mins, hey presto your couscous is ready.
I make mine with marmite (mixed in the water) add tomatoes & cheese very nice. Or make it sweet by adding cordial to the water, then when cooked add some fresh fruit.
If you want to use the peppers with the couscous I'd make up the couscous with whatever seasoning you fancy, roast peppers with onions, and tomatoes, mix together & yummy lunch. You could also add some quorn or chicken if you fancy.
