I made a sweet chilli sauce tonight to add to some leftover chicken i had. I made it based on an authentic thai recipe I found in a thai cook book. It's so simple to make and has no syns. Its very spicy but the amount of chilli can be adjusted according to taste to make it milder (i like it spicy) It doesn't make a lot as the sauce reduces a lot but just adjust the ingredients to suit.
The recipe I used was:
4 red chillies
1/4 tsp salt
189ml white wine vinegar (the recipe said white vinegar but I only had white wine)
8 tbsp sweetener
1) Deseed the chillies and chop them roughly. Blend them into a rough paste (I used a hand blender) then just put to one side for a min.
2) Add the vinegar, salt as sweetener to a pan and bring to the boil stirring constantly.
3) Once boiled, simmer until liquid starts to go thick then add the chilli paste and stir until combined.
4) Add to chicken or whatever other food you fancy and enjoy!
