chickpeas in pepper sauce.

This is another one I love. If we are having a dinner party and we have vegetarian guests and I am doing meat in a pepper sauce this is my alternative for them.

I have, of course modified it as I don't think double cream is quite the thing !!!

Also I never put measurements as I cook by eye and taste, never fails lol !!

A jar or tin of cooked chickpeas.
An onion.
A red pepper.
Frozen peas, I use about 2 tbs. per person.
2 carrots.
Very low fat fromage frei.
Ground black pepper

Dry fry the onion adding salt and a tiny sprinkle of sugar to caramalise the onions. Put to one side.

Dry roast the red pepper.

Boil the peeled and diced carrots

Mix the prepared veg. with the drained chickpeas in a saucepan.

Mix the fromage frei and black pepper to taste and combine this with the chickpea mixture.

Cook on a gentle heat until bubbling and voila, ready to serve with some plain white rice.

I hope you enjoy this as much as I do and in fact I think I might have this tomorrow.....ummmmmm feeling hungry. Off to boil my 2 eggs for breakfast.
