recipie for a basic white sauce please

I don't know how to make it anyway! :rolleyes: I know that's not very helpful but I was going to mention a lovely cheese sauce made of some double cream and cheese melted in. God I adore this and is brilliant over veggies etc.
 
From the Atkins book:

Cream Sauce - makes 20 tbsp
120g unsalted butter
3 egg yolks
60ml water
60ml double cream
dash of nutmeg (optional)

Place the butter in a bain marie over hot but not boiling water. Add the yolks one at a time, beating constantly with a rotary or hand electric beater. Add the water and cream and continue to beat until the sauce thickens which should take about 7-10mins. Garnish with nutmeg.

0.3g net carbs per 2tbsp

Never made it myself I prefer the cheese sauce, if you do let me know how it turns out!
 
Not sure for youe veggies but there is a cream mushroom and tarragon sauce in the recipe threads. Its really nice.
Or a blue cheese sauce, just cream and crumbled blue cheese.
 
for proper white sauce you need flour so no good for atkins!
 
You can use cream and either thicken it with egg (I saw Michel Roux Jr do this on Saturday kitchen but never tried it myself) or Xanthum Gum. I've used XG and you don't need much as it thickens cream up a bit too well! I don't know what it tastes like plain as I add cheese or herbs etc to mine.
