Roasted vegetables and swede wedges

Not really a recipe as such but recently I have fallen in love with roasted vegetables - I generally do some red and green pepper, some courgette, some field mushrooms and some red onion.. i use spray oil and slice a fresh garlic clove and throw that in and some sprigs of fresh rosemary... it's absolutely delicious.

I've also been making swede wedges lately - parboiling the swede for about 10-15 minutes and again using spray oil..and cooking in the oven for about 45mins - it's a good alternative to chips. Turnip and carrot also roasts well although is not quite as chip like.

I generally have the roasted veg and swede chips with one of those Tesco kiev thingies (stuffed with cheese and ham - 6 points or creamy peppercorn sauce - 5.5 points).. it's a delicious evening meal :)
 
I started 14th January and have lost 37lbs.. not much further for me to go as I am a size 10 now. I find it brings me UP emotionally when i can get into smaller and smaller sizes!

But I don't suffer.. I have a good varied eating plan and still have treats - booze, chinese, chocolate and crisps.

The only things I haven't had is an Indian takeaway since I started but i just remember that i want to be a size 8 more than i want that Indian and i'll have one when I get there.. :D
 
Does that mean the veggies are free thinking of changing from sw to ww but dont really want to go buy all the books just yet as spent a fortune on sw stuff (lost 2 and 1/2 stone but put 10 pounds back on ) so feeling a change might help
 
I really need to vary my veg more and this has given me some great ideas, thanks. Roll on shopping day
 
I also love roasted vegetables! I often will add some cut up chicken to them as well and have also tried roasted veg with some goats cheese on top! Delicious.
