Raspberry iced mousse

I just came across this recipe in a magazine and thought it sounded interesting and easily adapted to the SW plan.

I must say first that I have not tried this - but intend to at the first opportunity!! It sounds slightly weird, and a bit too good to be true, but worth a try.

I will give the ingredients as they appear in the magazine - obviously you would have to substitute granulated sweetener for the icing sugar, but the quantity would be up to you.

1 x 250g tubs Quark
50g icing sugar
squeeze or two of lemon juice
250g pack frozen raspberries

Beat the Quark, sugar and lemon juice together until smooth and creamy.

Gently stir in the frozen raspberries until they begin to break up and the mixture is streaked with pink. Taste and add more lemon juice if necessary.

Spoon into serving dishes or glasses and serve immediately.

serves 4

Now, I would think (feel free to disagree!) that as the raspberries are just broken up slightly then you wouldn't have to syn them, as you would if they were pureed.
 
that sound good:) and i agree that you shouldnt have to syn the raspberries especailly if you kept them whole when mixing with the quark, might try this soon and post back my thoughts, cheers for the idea x
 
well since i was feeling peekish but had used all my syns for today i decided to make it......and its fabulous a bit like ice cream because of the frozen raspberries and as i kept mine frozen i dont need to syn it....bliss x
sorry dont know how it make it smaller and for some reason my camera has made it look a funny colour but it wasnt in real life lol

not sure if it can be frozen either, might need to look into that as it was yummy they was it was but imagine it would be even nicer if the quark was frozen too. id bought the quark a while ago and necer got round to using it so when i made the recipe i tried the quark on its own and really didnt like it but.... when mixed with loads of sweetner and a little of the lemon juice it totally changed the flavour of it :)

I have to try this recipe!!

sounds just like one of my old favourites Eton Mess (made with strawberries, a splash of alcohol, crushed meringues and fresh cream(definitely not a SW recipe)) but this sounds like a very good substitute. I reckon you could use any fresh fruit thats cut into small pieces rather than mashed.
 
Sounds gorgeous if you crumbled in a meringue nest 2.5 syns would make it like Eton Mess (drooling) yum yum:D
 
50g of Icing Sugar = 10 syns. I may try it and swap the icing sugar for sweetener for a syn free treat.
