Cajun breaded mushrooms

I've just started SW again after gaining a few extra lbs after having my baby Oct last year. I'm starting to get back into the swing of things again and was flicking through some of my old recipes and magazines and came across this one (below).
I tried it and was very impressed with them they were Mmmm especially with the low fat dip that I made to go with them enjoy xx


Serves: 2
Syns per serving: 3 synes on green & Original
Cooking time: 20 minutes
Preparation time: 15 minutes

INGREDIENTS:
2 slices of wholemeal bread from a small 400g loaf
Cajun seasoning
Fry Light
200g mushrooms, left whole and wiped clean
2 eggs beaten

METHOD:

1. Make breadcrumbs from bread using food processor or hand blender.
2. Once blended add approx 1 tablespoon of cajun seasoning to the breadcrumbs.
3. Spraypan with fry light, dip mushrooms into the egg then into the breadcrumbs, ensuring they are fully coated abd place on baking tray.
4. Bake in hot oven until crisp and golden, and serve with tasty dip (recipe below).

DIP:
Make free mayo dip by mixing very low fat fromage frais, 2 tbsp white wine vinegar and 2 tsp granulated artificial sweetner. Blend 1 tsp mustard powder with 1 tsp water and stir into the dressing.
This makes a perfect dip to go with the cajun mushrooms!

mmmmmm I love mushrooms possibly could do these with garlic granules too to make breaded garlic mushrooms may go some tonight with my kfc chicken I am always left with breadcrumbs over and I wouldnt need to syn them then because the wm breadcrumbs would be in my HeB choice that I planned in my kfc chicken!
