Found this from another site, but thought it sounded yummy and it got really good feedback from others who have tried it
(I don't eat bacon so can't comment on it).

Chop and 'fry' one red onion and one sweet red pepper with some bacon.
Cook and drain the pasta. Mix the bacon mixture into the pasta.
Melt down either the laughing cow triangles or some ricotta cheese and pour it over the pasta and bacon. Tastes simply divine.
 
To melt the laughing cow cheese:
just put them in a pan with a dash of milk and whisk over a high heat. They melt within a couple of minutes. It makes a great cheese sauce and you can add it to pasta or pour over meat.
