Thai dipping sauce....

I have just started on SW and need some advice please.

I make these two dipping sauces /dressings on a regular basis and use for chicken, fish, pasta, salads or anything that needs a bit of oomph!

Can anyone tell me if they are free food or syn´d?´ Think the sugar is syn´d but not sure about the fish sauce.(9g sugar per 100g of sauce). Think I can substitute the sugar for sweetener..

Chilli Sauce: 250ml white wine vinegar, 250g caster sugar, 185ml water - boil together over med heat. Add 2 finely chopped cloves garlic, 2 large red chillies finely chopped (use more or less depending on how hot you want it), 1 tsp grated ginger, pinch of salt and 1 tablespoon fish sauce. Stir well, reduce heat and cook until thickened and syrupy. Takes about 25mins or so. makes about 500ml.

Thai lime sauce: 125ml lime juice, 3 tablespoons muscovado light sugar, 2 garlic cloves finely chopped, 1 chilli (without seeds) finely chopped, 2 tablespoons fish sauce, 1 tablespoon coriander leaves chopped, 2 sticks of lemon grass (inner bit) finely chopped or 1 tsp of lazy lemon grass (think Barts do this) small piece of fresh ginger grated. Put the lot ina screw top jar and shake like mad (good exercise for the arms!)

Those recipes sound great and I'm definitely going to give them a go. To answer your question the only synnable ingredient would be the sugar as fish sauce is free.
 
I am going to try making it today with Cologran (equivalent of canderel here in spain) and will post the results. Will have it with prawns and salad.
 
Tried it with the cologran and struggled to know how much to use. Eventually settled on 125g (half the amount of sugar). Came out ok but not the same as with caster sugar. Try a different amount of canderel next time.

I dont think you will get a thick syrup using sweetener rather than sugar but if you can fix the problem I will be most impressed and eager to try recipe : )
 
I'm not sure of the syns but for the first dip could you use half spoon sugar ? You need 1/2 the amount of normal sugar . Not sure how to replace muscavado x
