Green Day Quorn Sausage & Rosemary Risotto

Made this last night and it was once of the finest risottos i've done ... even the b'f had 2 plates of it :D

Ingredients:

Fry light
2 chopped garlic cloves
1 chopped onion
500g risotto rice
1/2 pack of fresh rosemary
1 litre veg stock
Quorn sausages [I used 5] chopped up
Salt & Pepper to taste

Oven cook the sausages first.

Fry light the onion & garlic until soft.
Stir in the rice and rosemary mixing it with the onions and garlic then pour in half of the stock and cook for 10 minutes or so or until most of the liquid is gone.
Add the remaining stock and chopped sausages until the liquid has been absorbed and the rice is tender then eat :D
 
mmm this sounds nice! Did you use the normal flavoured sausages or cumberland/lincolnshire?
 
Just tried this for dinner tonight - It was a little heavy on the rosemary for me, but still nice!

I popped 2 laughing cow lights into it to give it the cheesy taste to - so that was good.

My problem now is there is about 1/2 a pan full left & its so filling I don't know what I am going to do with it, :p

I have made this a few times, it is lush and so filling. I froze my left overs and just microwaved it when I wanted it :D
 
Bumping this for the folk who haven't seen it yet and because I'm having it for dinner tonight. It is yummy!

I've just started slimming world and still getting used to it. I've decided to go green days. U ave put ur recipe for green days does that mean it's free???
 
Bumping as i'm using the syn free linda mccartney sausages to make this for dinner tonight :)

PS just in case anyone gets confused, quorn sausages are no longer syn free so anyone using those would need to count 1 syn per sausage :)
