Chicken Curry

Serves 2

Ingredients
1 small onion chopped
2 x 150g skinless, boneless chicken breast diced
2 servings of madras curry paste (60g)
1 can of ww tomato soup
1 tablespoon of fat free yoghurt

Spray frying pan with fry lite spray.
Fry chopped onions for 1 minute.
Add diced chicken and stir fry on a high heat for a further 1 min.
Add the curry paste to the chicken and stir until all the chicken is covered with paste.
Add the tin of soup to chicken and allow to simmer gently for a further 10 mins.
Before serving gently stir in fat free yogurt.

This recipe is so quick and easy to make and is really yummy. Saw it on a tv cooking programme and simply substituted the original heinz cream of tomato soup for good old ww tomato soup.
