Onion Bhajees
Makes 4
2.5 points for entire recipe or 0.5 per bhajee
Freezing is recommended
NB. For a more authentic flavour, you can replace the plain flour with the same amount of gram/chickpea flour. The points will remain the same.
low-fat cooking spray
1 onion, sliced finely
50g plain white flour
4 tablespoons water
1 garlic clove, crushed
1/2 teaspoon turmeric
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon chilli powder
salt and freshly ground black pepper
Preheat oven to Gas Mark 7/220C/425F
Using a non-stick pan and the low-fat cooking spray, fry the onion for about 8 minutes until very soft and brown.
Mix together the other ingredients to form a thick paste--if it is like a dough add a little more water.
Now mix in the onions and stir well.
Divide the mixture into 4 equal portions and place each in a non-stick muffin tin.
Bake in preheated oven for 20 minutes.
Take the bhajees out and turn upside down before returning to the oven for another 5 mins.
Serve warm.
