Self-raising flour vs Tesco crusty wholemeal bread mix (Vixxters HEb)

Hi all,

I am new to cooking/baking (this is day two in fact lol - expanding my horizons!)

I want to make Weetabix cake, which I've found a recipe for, it sounds scrummy - but it is quite high in syns.

On the recipe is self-raising flour (113g), and I'm wondering if I can swap it for Tesco crusty wholemeal bread mix (2 lots of 57g for 2 HEbs).

Is this possible, will it still work, or am I just being a noob?

I don't think you could. Bread flour is higher in gluten which helps hold the bread together. From what I understand if you were to use bread flour in a cake recipe it may well turn out tougher and more chewy than if you used self-raising flour.
 
Circes is right it will come out heavy stodgy and probably indigestible lol xxx
