This is another one from the Tesco magazine:
Ingredients:
6 Medium eggs
Fry Light
1 bunch spring onions, trimmed & chopped
200g bag of spinach, cooked and drained
75g Low fat Cheddar
Instructions:
Serves 4 people
2 ½ syns per serving on all plans (I haven’t taken the cheese as a HEA)
Spinach and Spring Onion Frittata
6 Medium eggs
Fry Light
1 bunch spring onions, trimmed & chopped
200g bag of spinach, cooked and drained
75g Low fat Cheddar
Instructions:
- Preheat the grill to high. Break the eggs into a bowl, season, then briefly beat with a fork.
- Coat a frying pan with the fry light then add the spring onions. After a minute add the spinach and spread evenly around the pan.
- Pour in the eggs and mix quickly with a fork, cook for a minute or two hen stir again. Cook for 2-3 minutes, constantly easing the edges of the frittata away from the sides of the pan.
- Sprinkle with the grated cheese and grill in the frying pan for 5 minutes or until golden brown.
