Vegetarian GI recipes

I'm having trouble finding Low GI vegeatrian recipes,
I've soent the last week on wholewheat pasta, bean and eggs.
Loads of veg and salad of course, I'm just starteing to get bored.

I live in italy so its very hard to find whole foods here, outside the big cities.

Any help would be great for all us low GI veggies

Hmmm I sort of concoct my own freaky ones. I dont follow anything. I just throw bits together really. I did read you ordered a gi veggie cookbook. How is that working out? Whereabouts in Italy are you? Venice is my fave place on earth!!!
