Coconut Milk

Hello,

I'm desperate to make a thai green curry, I so so so want one, but I just looked up the nutritional values for coconut milk, and even the LIGHT one has 204 cals in half the tin... and 18.6g of saturated fat... Thats scaring me. [EDIT - I got the wrong information - The LIGHT ONE IS 88 CALS AND 5g SAT FAT...2.5 points]

Has anyone got any magical ideas for how I could replace this for a lower fat alternative? Do you think that normal milk would work?

you could use creamed coconut - a little bit for flavour??
 
creamed coconut has the same amount of points in it. i use yoghurt instead in mine
 
I found one in my tesco's a couple of weeks ago in the ethnic food section that had half the cals/sat fat as the low fat one on the normal shelf. And it was a quarter of the price too. Check some of the other brands as you might be surprised at them.

The good news is, I fluffed up, and got the wrong nutritional information....

The RIGHT stuff is as follows:
Blue Dragon Light Coconut Milk - 1/2 tin [200mls] is 88 cals and 5g sat fat. I've edited the post above to hopefully stop confusion...

And my curry is bubbling away nicely. My day just took a turn for the better :D

I love a thai green curry, how many points per serving hun?
 
It was 6 per serving Ally, here's what I did..

2 tbsp Thai Green Curry Paste - 2 pts
200mls LIGHT coconut milk - 2.5 pts
100g jasmine rice - 5 pts
One chicken breast - 2.5 pts
One red pepper
One small carrot
Total of 12 points and 2 good servings. So 6 points a serving.

General method, if you want a go - Chop the chicken and veg into thin strips, pieces. Cook the rice as per packet instructions, fry the chicken in frylight for about 5 minutes. Add the paste, and mix well, then chuck in the veg and add the milk. Stir, simmer for about 10 minutes til the sauce all goes green and yummy looking and serve with the rice.

I would use light coconut milk with 0 point vegetables like swede, BNS, cauliflower, peppers, baby sweet corn etc. That way all the points would be in the coconut milk alone.
