Tuna pasta bake - 500 calories per serving

This will serve 4

200g pasta shapes
2 x 200g cans of tuna in brine or water drained
1 pack of fresh parsley chopped or 2 tablespoons of dried
2 tablespoon of low fat margarine
2 tablespoon of plain flour
1 pint of skimmed milk
100g low-fat soft cheese
1 tablespoon of French mustard - English if you prefer a stonger flavour
75g half fat cheddar or RC cheese grated
salt and pepper to taste

Cook the pasta, drain and place in an ovenproof dish.
Add the tuna and parsley.
In a saucepan, melt the margarine, stir in the flour and cook for 2 mins.
Gradually add the milk whisking all the time and bring the sauce to the boil. Simmer for 2 mins stirring all the time and then add the soft cheese mustard and seasoning.
Pour the sauce over the tuna and pasta and mix through. Sprinkle over the grated cheese and bake in the oven for 20 mins at Gas mark 6/200C/400F or until golden and bubbling.

Serve with a large salad.

This doesn't look a lot on the plate but it is very very filling.
