I've gone waffle crazy! Here's a recipe for a savoury version using mashed potato and/or sweet potatoes - any proportion you like, depending on what you have in.

It's tweaked from a recipe I found on the internet. Still getting my head around my waffle maker, so don't know if you can reduce (or even completely omit) the butter. Any tips welcome.

(BTW if you don't have a waffle maker, I reckon you could cook these like drop scones on a griddle or in a frying pan)

Mashed Potato Waffles

Flour = 27 syns, butter = 10 ½ syns. Total 37 ½ syns. Makes 12 large waffles at just over 3 syns each

2 eggs, separated
½ cup fromage frais/fromage blanc
½ to 1 cup water
1 ½ cups cooked mashed potatoes and/or sweet potatoes
1 shallot
28g melted butter
150g flour
1 ½ teaspoons baking soda
1 teaspoon salt
Method
Separate eggs, putting whites in one bowl and yolks in a large bowl. Beat yolks and add the liquid, potatoes and butter. Sift dry ingredients and add to egg mixture. Beat gently until smooth. Fold in stiffly beaten egg whites and bake in waffle iron.
