For lunch I made some vegetable soup.
Basically I put some carrots, onions, broccoli, cauliflower, celery, peppers,peas and sweet potato in a pan with 2 1/2 pints vegetable stock and just simmered it until all the veg was cooked. I then blended them all together and it has made enough to feed an entire army. I then added some chicken to my bowlful. I will freeze some and the rest I will be able to have during the week.
Tea is going to be peppered beef casserole with mash potatoes, carrot & swede. This was a meal we had last week but there was some left over so I froze it.
