Courgette curry

I found this recipe online yesterday and made it last night from MIL's glut of courgettes. Delicious. Swap the oil for frylight and it's more or less syn free - just 1tbsp tomato puree.

Ingredients (for 4 people)

675g sliced courgette
2 tbsp oil
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1 onion thinly sliced
2 cloves garlic crushed
1/4 t sp g turmeric
1/4 tsp chilli powder
1 tsp g coriander
1 tsp g cumin
1/2 tsp salt
1 tbsp tom puree
1 tin chop toms
150ml water
1 tbsp fresh coriander chopped
1 tsp garam masala

Method

trim and slice the courgettes into 1 cm slices.

heat the oil in a heavy pan and fry the cumin and mustard seeds for 2 mins, until they splutter.

add the onion and garlic and fry for 5 mins.

add the turmeric, chilli powder, g coriander, cumin and salt and fry for 2-3 mins coating the onions.

add the courgettes, and cook for 5 mins, stirring allt eh time so not to burn them.

mix the puree with the tom's and add to the pan with the water.cover and cook for 10 mins, until sauce thickens,

Stir in the fresh coriander and the garam masala, cook for further 5 mins until courgettes are tender
