Jerusalem Artichokes!!

Honeyoc

Is a crunchy mama!
In class this week our consultant asked us all to try a vegetable we had never tried before and I chose jerusalem artichokes and I have to say they are yum! I made a jerusalem artichoke soup for lunch and it was so lovely, creamy with a slight nutty taste. We should all try something we never have before, there are so many great discoveries out there!!!

A lady at my group bought a load in when they were featured in the mag a while back... I had them on a roast and they were absolutely delicious! x

In the spirit of trying something new, I have bought asian pears this week. I tried one earlier and didn't like it. It wasn't sweet like a normal pear (I expected the odd texture). Does anyone know if they sweeten up if they are left to ripen for longer? Sorry to add this question on OP!!

You can have jerusalem artichokes raw in a salad as well. Slice them very thinly - they are lovely and crunchy. Similar to water chestnuts.

I have never tried Jerusalem or Globe artichokes ever....I think they must be the only veggies that I haven't tried.

ooo I love artichokes...they do have a side-effect though, I might avoid them for lunch ;)

I know this is an old thread but wondering if you have the recipe for that soup as bought some of theses as they are on offer in Tesco? x

not a recipe as such but I wash and scrub them, then boil in marigold bullion powder stock until sof then blitz and sieve. Sometimes I add a dash of milk

I looked on mysupermarket.com and thy have them in jars ( with oil mostly..:( but some in brine ) and in packets roasted.. might be worth a look if you like them.
