Red Day Spicy Meaty Lettuce Cups

Hi all. Had a gorgeous dinner last night - so much so, that we're having it again tonight :D

Firstly, core an iceberg lettuce, remove outer leaves then chuck it in a bowl of ice cold water.

Fry turkey mince with diced peppers and garlic (and some chili flakes if you like it pretty hot). Drain excess water, add chopped chilies, tabasco, Worcester sauce, and a tiny sprinkle of Peri Peri flakes and cook out until dry.

Separate the lettuce leaves and dry with kitchen towel - they'll stay nice and crisp now.

Place your spicy meat in a lettuce leaf and top with some VFF creme fraiche, mixed with suger-free mint sauce, wrap it all up and enjoy!

it's a great combo of hot, tender spicy meat with cold, crunchy, sweet lettuce leaves and a dip to top it off...a bit like a Yuk Sung, but without the calories ;)

I think we'll try it with minced lamb, cumin and coriander tonight!
