Red Day Turkey mince loaf

This is the easiest dish I have made in a long time! Had it tonight it's delish :) It serves 4, and I used Mozzarella instead of cheddar (4ounces as there was only 3 of us tonight) Only thing I would say is I couldnt really taste the cheese not sure if it was because it was mozzarella.


Fry Light
1 medium carrot, finely chopped
1 medium onion, finely chopped
1 large tomato or 6 cherry tomatoes, finely chopped
4 medium mushrooms, finely chopped
1 clove garlic, chopped
454g/1lb turkey mince
1 egg
1 tsp mixed herbs
170g/6oz reduced cheddar, grated
Salt and pepper



To serve:
4 level tbsp cranberry sauce (optional)

1. Heat oven to 180°C/Gas 4. Spray a pan with Fry Light, add the carrot, onion tomatoes, mushrooms and garlic. Cook for about 5 minutes, and then take off the heat.
2. Into a large bowl mix all of the ingredients together well, season to taste. Transfer to a non-stick loaf tin. Bake for 1 hour on the middle shelf.
3. Remove from tin, then slice and serve hot or cold with Free vegetables, a crisp salad and the cranberry sauce, if desired.

You're welcome :) must say I demolished about half of it (didn't have anything with it) and I was full! My hubby, brother and sis in law came home and demolished the other half with mashed pots and gravy I have never had so many compliments lol made my day especially for such an easy dish.
