Salmon fishcakes

Made these for tea tonight and they were lovely.

Ingredients:

Salmon fillets/tinned salmon
Potatoes
Spring onions
Egg
Wholemeal bread/breadcrumbs

Poach salmon, when cooked remove skin and break into pieces. Boil some potatoes, season and mash (dont add any butter or milk). Combine Salmon and mashed potatoes with chopped spring onions and make patties. Dip in egg and breadcrumbs (made from wholemeal bread chopped/blended). Fry in fry light for a few minutes either side and then finish in the oven.

If using bread as a 'B' choice, should be pretty much syn free/low syn.

For a budget/quick & easy version use tinned salmon and smash :)

Not too good with exact quantities, but we used 3 fillets, around 5-6 medium potatoes, 2 eggs and 6 pieces of bread. This made 6 good size fishcakes.

We served ours with syn free chips and veg :)

I made my own version of these today, after seeing them on Come Dine with Me :) Mine were pretty much like yours, but I skipped the breadcrumbs and added parsley to the patties.
 
How did they cook without the bread crumbs? I am keen to try these but never get around to it.
 
I sometimes make fishcakes and dip them in whisked up egg then roll them into uncooked couscous. This makes a really crispy coating and would be syn free.
