Hello everyone, got lots of recipies from here, just thought I'd repay you with one ive just made up. :D

Serves 2

Free on green if using cheese as HXA


Cheese and leek quiche.

you need:

  • Half a packet of smash
  • 3 eggs
  • 1/4 leek
  • 56g cheddar
  • dash of milk (you can leave this out if you prefer)
  • Salt and pepper to season.
pre-heat oven to 180

I made up the smash as directed on the packet.

I sprayed a flan dish with frylight and then spread the smash over making sure I got up the side. You want to make sure its quite thin, but then again not so thin as it'll break when cooked. I put some hot water in a glass and dipped in a spoon then used this to spread the potato. If you keep dipping in the water it stops the spoon sticking

Put base in oven and leave till golden, I think this took around 15 minutes.

While that is cooking chop up your leek and beat the egg and milk together. Add a sprinkle of salt and pepper. Add the leek to to mixture.

Grate cheese and add 3/4 to the mixture leaving half to sprinkle on the top.

Once your base is golden brown add the eggy cheesy mix to the top and put in the oven for 20 mins

Add the saved cheese and return for 20 mins.

Cheese and Leek Quiche --- DONE !

I shared mine with my hubby and he said it was nice and he is quite hard to please. You could experiment with adding different flavours to the eggy mix with free foods

If any one comes up with any others please add, I thought cheese and broccoli might be nice too, Gonna try that one next.
