Aubergine, Tom & Mushroom bolognaise - SW 100 Secret Sauces book. This is seriously delish!!! Aubergine, cherry toms, mush, passata, garlic, onion, mixed herbs, bit of sweetner & stock....reduce for half hour, whack on some tagliatelli..... syn free and seriously seriously good!!! Not a speck of meat in sight and not at all missed! xx
