I made this last night and it was lovely!

I fried onion and lots of garlic in fry light until soft then added quorn mince. Cooked for a minute or two then added a lamb oxo, mixed herbs, salt, pepper, and some passata (tin tomatoes would be fine). While that was bubbling away I sliced an aubergine in 1cm ish thick slices and fried that until coloured nicely on each side in a seperate frying pan and boiled sliced potato in a saucepan until three quarters cooked then drained.
I then layered it up. Quorn mix in bottom, layer of aubergine, more quorn mix then a layer of potato.
For the topping I mixed a tub of 0% Total greek yoghurt with an egg and whisked well. Poured it on top, spread it out then grated some hexa low fat cheese on top.
Baked at 160 for about an hour. The top puffed up beautifully and it looked gorgeous when done and tasted divine!!!
Assuming Total 0% is free (which I think it is) then this is a totally syn free meal on a green day.
