I imagine it would be just the same as doing ordinary potato chips. You'll find a thread here on how to make them.

I ended up just roasting it in chunks in fry light at 200 c for about 35 mins - it was delicious. I did hubbies in olive oil (he hates fry light) and his were not as nice and carmelised, ill be living on them and my son loves them too so always a bonus!
