Harlequin Squash

We were talking about squashes a while back and I mentioned that I had bought a Harlequin Squash.







Finally got round to cooking it this evening. Gosh it was difficult to cut. Eventually I cut it into quarters with my heaviest knife (if you do this, please mind your fingers!!!!), sprayed it with Frylight and baked it.

When it was soft, I scooped out the seeds, seasoned it and ate it with a spoon.

Gosh it was delicious!! And filling. And free!
 
Oooh good tip, I do love squash! I might find me one of these babies!
