Easy Peasy Seafood Chowder

FREE on Extra Easy (with HE-A milk)

Serves 2

Ingredients:
· Any smoked white fish loin of your choice (haddock, cod, etc), cut into large chunks.
· Prawns
· 2 rashers of bacon (trimmed to remove fat) chopped
· 2 carrots, small-ish slices
· 1 leek, sliced
· Half an onion, chopped finely
· Tin of sweetcorn
· Potatoes (about 400g) peeled and cubed
· 500ml milk (semi-skimmed or skimmed)
· Bay leaf
· Salt and pepper to taste

Method
1. Sweat the onions in frylight and add the bacon to cook through.
2. Add the carrots, potatoes and leeks, season and add the bay leaf. Pour on the milk, bring to the boil and reduce to a low simmer. Keep stirring regularly so the milk doesn’t burn on the bottom of the pan.
3. When the veg are starting to become tender (about 10 minutes depending on the size of your spuds), add the prawns, fish and sweet corn. You’re really just heating these through, and the fish takes no time to cook. The fish will break into nice flakes as you stir.
4. About 3 or 4 minutes later, it’s ready to serve! Ladle into a big bowl and tuck in.

Cook's tips:
F 250ml of semi-skimmed milk is a HE-A choice, so if you use 500ml of semi-skimmed, half the portion is the A. I used skimmed. You get 350ml of that, so if you choose skimmed, you’ve still got 100ml of milk left for brews or whatever during the day!
F Not keen on smoked fish? Simply substitute non-smoked white fish. It will be a more delicate flavour but still tasty.
F Hungry? Feel free to bulk it out with a bit more veg - mushrooms are nice, or perhaps swede. Make sure there's enough liquid for your potatoes to cook though.

This is very similar to a dish called Cullen Skink....a famous North East of Scotland soup! :D I make it all the time but probably more calories in mine. We don't add veg though. Just smoked haddock, butter, milk, stock, onions and potatoes. Lush!!!!
 
I'm going to make this for dinner tonight - climbing back on the wagon and ressurecting some of my old fave SW recipes and this one is right up there at the top of the list. Now it's gone more autumnal (proper October weather) it should be perfect. Who'd have thought it was BBQ at the weekend and wintry food by Tuesday! lol!

I really want to try this, might sound a silly question but how much white fish do you think I'll need and also is it a little or big tin of sweetcorn?
