Thai Salmon

Serves 2

Ingredients

1 Pint Vegetable Stock
2 Tsps Ground Ginger
4 chopped spring onions
1 Small chopped Chilli
175g Mange Tout
Small piece of crushed Lemon Grass
2 Tsps Lemon juice
2 Salmon fillets
Noodles - (Optional)


Method

Put 600ml (1 pint) chicken or vegetable stock into a wok.

Add spring onions, sliced mangetout, ginger, chilli, lemongrass and lemon juice.

Gently stir in noodles if you are using them.

Place salmon fillets on top and simmer gently for 8-10 minutes.


*Don't forget to syn your noodles if you are adding them to this dish*
