hi there
inspired by BL i'm going to start recording recipes which have worked well for me...
so, tonight i had:

grilled halloumi with broad beans, peas and rocket salad. It was absolutely gorgeous!!!

serves 2 as main, 4 as starter

150g broad beans
- i used canned
200g frozen garden peas
4 spring onions trimmed and finely sliced
3 tbsp pine nuts, toasted
2 large handfuls of Rocket

mix above all together



Dressing
3 tbs olive oil
Juice of 1 lemon
1 tsp caster sugar
1 small clove garlic, finely chopped
Sea salt and black pepper
1 tbsp of fresh mint, finely chopped
1 mild red chilli seeded and finely chopped

mix together and shake, drizzle over salad

1 x 250g Halloumi cheese cut into slices - grill for about 3 mins each side,place on salad

about 380-400calories if you are counting!

Sounds absolutely delish Daisy, A whole load of my favourite ingredients in there, will absolutely try it when I am on the great return to food.

i get it ready wrapped - just on the cheese bit at supermarkets.

tonight i had garam masala spiced brown rice with peas and pumpkin seeds

brown rice and garam masala cooked in tablespoon of olive oil for 3 mins in a frying pan. Added 1pt of marigold stock and simmered sort of risotto style for 25 mins. Added in petit pois and cooked for 5 mins more. drained then tossed in lots of warm, toasted pumpkin seeds.

had it with half a fish cake

really really nice - very more-ish ( but i resisted!)

carol vorderman recipe tonight - lovely
broccoli and bean soup

4 spring onions, 2 tsp curry powder, 1 pt marigold stock simmer 4 mins
add in 1 medium potato, 1 head of broccoli 3/4 pint stock simmer 15 mins
add in 400g tin flageolet beans
blend in food processor

eat

delish!

summer veg stir fry ( carol vorderman detox )

- babycorn, baby carrots, mangetout, green beans, asparagus, courgettes, garlic, fry in tbsp rapeseed oil
add orange juice, orange zest, honey, soy sauce, toasted cashew nuts - absolutely gorgeous!!!!

chuck in a couple of prawns too
 
Ohh sounds fab Daisy. I tried the chicken and chickpea curry that was in the LL mag (the last one I think) and it was yummy...:)
