Back to work next week (I work in a school). Dont know what to take for lunch...been having beans/mushrooms on toast but cant do that at work.

Any suggestions please..........:)

My lunch is usually 2 slices of granary / whole grain bread, with extra light philly cheese instead of butter, some wafer thin ham and salad.

A couple of other potential lunches depending on facilities and taste

Pasta salad - use low/non fat cottage cheese, low fat caeser sauce (Cardini I think it's called), lf cream fraiche or vinagrette. Could add in a hard boiled egg and salad.

Roast vegetable couscous - Ainsley Harriot packs, other flavours too, just add boiling water and stir it. Goes great with a small tin of tuna stirred through it and some veg (could microwave some peas and sweetcorn).

Or if you can microwave at work then you could make up some light pasta with some tuna, veg and a LF tomato sauce and then just reheat. Same goes for rice eg risotto etc.

Hi, I just have 2 slices of granary bread (no butter) with salad and also I take a piece of fruit for a mid-morning snack.

If you have the sealable bags, you can make all your salad up on a Sunday, store it in separate bags and then take one out of the fridge every morning on your way to work.

You can also try things like low fat cup-a-soup with ryvitas or a banana on ryvitas/crispbreads.

Another quick idea (mainly for winter and if a microwave is available) is Heinz Big Soup (about 200 cals for a whole can).
