Ainsley Harriot's Spiced Indian Kofta
Serves 4
Syn Free on Red Day

1lb lean minced beef
1 garlic clove crushed
1" fresh root ginger, peeled and finely grated
2 spring onions, trimmed and finely chopped
1/2 tsp salt
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp garam masala
pince of cayenne pepper
3 tbsps chopped fresh coriander
1 green chilli, seeded and finely chopped
3 tbsp 0% greek natural yogurt

  1. Put everything into a bowl and mix together with your hands.
  2. Divide the mixture into 8 and then shape each piece into a long sausage around a skewer.
  3. Barbecue over medium-hot coals or grill for 8-10 minutes turning every now and then until lightly browned and cooked through.
  4. Serve with extra yogurt and lemon wedges.
Delicious hot or cold with salad

If we get another BBQ in this year I'll do these I think.
